When Pinterest Fails You

I am sure we have all been there a time or two, if you use Pinterest at all. You know, you go and pin something to eventually go back to later, then the site you are referred to from that pin has nothing on the how to side of what you actually pinned. Then the facepalm happens, followed by muttering some choice words under your breath, and just deleting the pin altogether, or spending loads of time looking for the recipe, or the directions for said pin.

 If you follow me on Pinterest (yes, click the link, you know you want to), I am sure you have seen this pin.


I was making breakfast for dinner one night this week -because that's what you do when you're low on groceries and have not stepped foot in what I like to call food hell in a while, although it feels like I just did it yesterday (I still haven't recovered from the last excursion) Anyway, The Mister doesn't really DO breakfast foods such as the pancakes, so I got a bright idea to make him these ham cups, so off to Pinterest I went, knowing I had that pin. Lo and behold this pin took me to skinnymom.com. I searched and searched this website for this recipe and it was not to be found. Well, this little non Betty Crocker improvised. I was not going to allow this pin and its skinnymom.com to defeat me, no sir!

So here is what you will need for my Yummy Ham Cups

1 Nonstick mini muffin pan (if not nonstick, use your head and spray the crap out of it with some PAM, spread some crisco, whatever you fancy, and make it nonstick)
4 Large eggs
Shredded cheese
Ham (preferably lunch meat style, not too thick, or too thin)

I placed 1 slice of ham in each muffin slot, placed shredded cheese to fill the bottom of the ham. I then scrambled 4 large eggs in a glass bowl. If I were eating them that night, I would have put some green and red bell pepper and onion in with the egg, but you dress them however you would like. I ended up putting some pepper and what would be anyone's equivalent to Tony Chachere's, but with more kick, we call it Aww Shit. I then filled all my cups pretty much to the brim with the egg mixture. Then it was cooking time. I baked at 350 for 15 minutes and it was done. The entire dozen were gone in a matter of seconds!

The green is also a special household staple, and pretty darn hard to find! Trust me when I say this stuff has a little heat to it. A little really does go a long way, and is so good with eggs and omelettes.

Weekend Update


This weekend was a little rough. I had been flaring all week so it was pretty painful to say the least. The Mister had his first unsupervised injection that he gave me,and I think the last. You know something isn't right when you can't feel the needle. Ouch!

I need a manicure so bad. This color is OPI Cajun Shrimp!

We also had my nephew Friday night. They just so happened to wake up at 5am, so I endedup with 2 kids,a dog, and myself in 1 bed. You know,so the monsters wouldn't get us. I put myself on the couch with the pup. Someone had to be on the lookout (and get some sleep).

What I watched this weekend:




Saturday was a day of resting up, knowing we had a big night planned and all. Our Bear was so excited to be going to see the circus for her first time ever! She had only been talking about it for 6 months! She absolutely LOVED it, and that mkes my heart happy, and makes it soo worth it. The circus for her just would not be complete for her without a spinning light, a stuffed animal, a sno cone, and cotton candy.

Sunday, I was still feeling quite bad. I got up when Little Miss did and ended up sleeping on the couch until noon! I did not get up all day. My body felt like Iit had the flu with all the aches! Then this happened. 


I had stepped on something last week and The Mister finally dug 
it out!

My Weekends

I have had lots of free time on my hands lately. My weekends are pretty lazy since I am usually out of it on Saturdays after my medication on Friday's. I know The mister has been in heaven because last year he got annoyed with me having jam packed weekends for us every.single.weekend. No lie. So I had already cut back on weekend activities because of that, so now that I have no choice, I have been going a little stir crazy! I feel like I never leave the house. With that being said, I have turned to Netflix. There are so many titles to choose from, and so much that is just plain garbage!

Here is what I watched this past weekend:

The Bachelorette.

This was simply entertaining, funny, and a mindless movie. It had a great cast, and they had quite the wild time with a little mean girl action. What a crazy bunch! Yes, The Mister watched this one with me, and even had quite a few chuckles of his own.



Next up was My Girlfriend's Boyfriend

Don't be alarmed by the title. It isn't what you might think! This was a cute movie, and I enjoyed the cutesiness to it, up until the ending. A writer meets a girl, they date, fall in love, his writing improves, and the movie takes you through their journey together. (The Mister slept through this one)

Then there was Troubled Waters

This one was a crime mystery, and actually a pretty good one. A little girl is kidnapped, and beneath it all, it had its own twists and turns that I couldn't even dream of. Definitely one to watch.

Quick Update

I had another appointment yesterday. Apparently the methotrexate pills are not working, or doing what they are supposed to do. I am  now being switched to injections, and they are upping the dose! The Mister now has to learn how to administer said injections. Thank goodness one of my best friends is a nurse and she will be at our house Friday to teach him. I would do it, but I just can't stab myself! I go back in 5-6 weeks for more bloodwork. The good thing is, I have been removed from having to take the plaquenil since my liver isn't so hot right now. Since methotrexate is also absorbed through the liver, they decided it would be most beneficial to take me off the plaquenil and flexoril. Also, I am finally down to 5mg of prednisone and will be completely off in 5 days. Now let's see if the methotrexate is able to fully keep my scleritis from flaring. Fingers crossed!
